Creamy Roasted Tomatillo Salsa


450g tomatillos, husked and halved

225g heirloom tomatoes, chopped

½ white onion

3 cloves garlic

2 jalapeno peppers, seeded and diced

1 tbsp avocado oil (any oil will work)

Salt and pepper

1 lime, juiced

1 avocado

2 tbsps coriander, roughly chopped




  1. Preheat oven to 220°C or 200°C fan or Gas Mark 7.
  2. Add tomatillos, tomatoes, onion, garlic and jalapenos to a baking tray lined with If You Care Parchment Paper.Drizzle with oil and season generously with salt and pepper.
  3. Place the veggies in the oven for about 25 minutes, then remove and allow to cool.
  4. Place veggies in a blender and add, lime juice, avocado and coriander, then blend until just mixed.
  5. Chill and serve.


Tip: If you are unable to find tomatillos, both fresh or tinned, we suggest using the same quantity of firm, green tomatoes and adding an extra 1-2 tbsps. of lime juice to achieve the sour taste of tomatillos.
