Turkey and Kale Meatloaf

Turkey and Kale Meatloaf


¾ cup ketchup

¼ cup barbecue sauce

1/3 cup Worcestershire sauce

1 tbsp olive oil

1 cup onion, diced

1 tablespoon fresh parsley, minced

1 tsp fresh thyme, chopped

1 ½ cups kale, roughly chopped   

1lb ground turkey

2 large egg

¾ cup rolled oats   

¼ cup parmesan cheese

5 cloves garlic, minced




Preheat oven to 350 degrees F.

In a small bowl, mix together ketchup, barbecue sauce and Worcester sauce, split into two bowls and set aside.

Heat olive oil in a large saute pan, then add onion, garlic and kale, season with salt and pepper and sauté until well done. 

Remove and set aside to cool.

In a large bowl, combine turkey,  eggs, oats, parmesan, parsley, thyme and cooled kale, season with salt and pepper, then form into an If You Care Paper Loaf Pan.

Glaze the top of the meatloaf with ½ of the sauce and bake for 45 min or until the top is browned, then slice and serve with reserved sauce.
